This dry, delicate, lean and light white is the perfect summer aperitif.

Variety: 100% Bombino Bianco
Origin:  Castel del Monte region, Puglia, Italy
Ageing: 2-3 months in glass-lined cement vats on the lees
Tasting Notes: Green-tinged straw yellow; crisp, fruity bouquet with notes of apple; complex, crisp, fruit-rich palate, well-balanced with a mineral finish and a tangy vein of acidity
Cellaring: 2-3 years
Alcohol: 12.5%
Pairing: Excellent with hors d’oeuvres and fish or as an aperitif

Picked at full ripeness, maximising the grape’s personality while preserving its lively acidity. Lemon balm and pine aromas, tropical banana notes on the palate. Lees ageing in cement lends a creaminess.
