I used to have a Hodge-Podge of pots and pans. They were functional, but certainly had no modicum of finesse.

When I upgraded my kitchen recently, I decided to invest in top of the line cookware. So quite a few pieces of ALL-CLAD STAINLESS STEEL COPPER CORE came to live in my cupboards. They are an extraordinary addition to my kitchen, and even the most mediocre of kitchen tasks—boiling water, say—is accomplished with a bit of aplomb. This is to say nothing of the more challenging culinary feats that they can rise to the challenge of with ease.

and I love to try new recipes. So my cookware gets a lot of use.

What sold me on the All-Clad Copper Core collection was twofold: its highly polished, elegant good looks; and its superior cooking capabilities. The pieces are heavy and well-crafted. It’s simply beautiful cookware.

Let’s just say it right off the top—All Clad Copper Core is expensive. However, every piece I purchased was on sale (I’m an intrepid bargain hunter), and although it’s a sizeable investment upfront, I will likely never need to replace a pot nor pan.  Furthermore, because I don’t abuse them and am obsessive about taking care of them, they’ll no doubt be passed down to my children. (Who have been taught to never use metal implements). They’re built to last. I like that.

WHAT IS COPPER CORE?

This cookware is unique in its design and innovative in construction. The 5-ply bonded cookware is made like a five-layer sandwich: from inside to out is stacked: stainless, aluminum, copper, aluminum, and stainless.

Copper is known for its superior heat conductivity. This means the pots heat up and cool down faster, the heat is more evenly distributed, and thus lower heat settings are needed. Proper handling is required to prevent food from sticking or burning. Namely, heating the pan up slowly, adding oil, and not getting it too hot. It takes a bit of getting used to, and a bit of practice.

Caring for copper core is easy. Hand-washing is recommended. I use warm soapy water after each use and the All-Clad powder cleaner every once in a while. A copper cleaner can be used on the copper rim to keep it shiny, although tarnish will not affect how well it cooks.

I’ve been thrilled with my All-Clad. I take a moment to admire the gleaming row each time I open the cupboard and lift their graceful handles.

Some say food tastes better cooked in Copper Core. Or perhaps one becomes a better cook by using professional grade cookware.
