The fresh young vegetables are overflowing at the market.
4 TBS. olive oil, plus more for serving
4 TBS. fresh lemon juice
2 garlic cloves, peeled
2 tbsp tahini
1 large can of chickpeas (about 2 cups), drained and rinsed
4 TBS. water or reserved liquid (optional)
1-1/2 tsp sea salt, or to taste
Combine all ingredients in food processor or blender. Process until smooth. If you wish, add a bit of water or reserved liquid to desired consistency.
Transfer to bowl. Swirl with spoon. Pour olive oil on top. Sprinkle with herbs and sesame seeds to get fancy.
